Ayvalık is a region historically known for its low-acidity, aromatic, and well-balanced olive oils. Zeze reinterprets this geographical heritage through modern regenerative agriculture principles. Existing olive groves are preserved, rehabilitated, and their productivity is increased by strengthening natural systems.
Zeze olive oil is defined by how we produce it:
Production is carried out largely through a dry farming-based system. The olive groves are managed in harmony with Ayvalık’s natural rainfall regime; the trees are encouraged to develop deep roots and establish their own water balance.
The olive groves are approached through permaculture-based land planning. Olive trees are designed as part of a single ecosystem together with bee pastures, aromatic plants, and natural areas.
Soil health is continuously strengthened through green manuring, organic matter cycles, and compost applications. The aim is to increase the soil’s water-holding capacity and microbiological vitality.
Biological balance is preserved through crop rotation and multi-species planting. Medicinal and aromatic plants such as lavender, thyme, and sage both support the ecosystem and distribute production risk. Water and soil management are provided through land-specific rainwater harvesting and natural water retention systems. In this way, erosion is reduced and rainwater is retained on the land.
Tree health and long-term productivity are prioritized over short-term production pressure. Care and pruning practices are planned according to the natural rhythm of the tree.
This holistic approach targets not only today’s production security, but also that of the decades ahead. Systemic resilience against climate fluctuations is a fundamental element of the design.
